This is a modification of Kraft’s hot cereal pancake recipe. If you are not familiar with multi-grain hot cereal, it’s a mixture of coarsely ground nutritious grains such as oat, wheat, rye, millet, and wheat. If you can’t find anything similar in a local store, you can substitute the hot cereal with oats.
Must-try healthy breakfast pancakes with wild blueberry topping
4 servings, about 3 small pancakes each
Preparation time: 20 minutes
3/4 cup flour
1/2 cup multigrain hot cereal
1-2 tablespoons sugar or sweetener, depending on sweetness preference
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup milk
2 tsp. oil
1/4 teaspoon vanilla extract
1 can coconut milk, chilled in the fridge
1-2 teaspoons sugar or sweetener
2 teaspoons Arctic Flavors wild blueberry powder
- In a large bowl, mix flour, hot cereal, baking powder, sugar, salt, and cinnamon. In a medium bowl, mix milk, egg, oil, and vanilla extract. Combine all ingredients, mixing well. Set aside.
- Next, prepare the blueberry cream. Open the chilled coconut milk, in which the milk has separated into two layers: firm, creamy top, and liquid bottom. Scoop out the firm creamy layer into a large bowl, leaving the liquid in the can (can be used for smoothies or enjoyed as coconut water!). Add sugar to the bowl and whip the milk using a mixer. Lastly, mix in wild blueberry powder gently.
- Start cooking the pancakes on a lightly oiled large pan, over medium heat. Use 1/4 cup (60mL) of the pancake mix for each pancake. Once bubbles start forming on the pancakes (depending on the pan and the stove, typically between 1-2 minutes), flip them over. Cook for another minute on the other side.
- Stack the ready pancakes one by one, adding the wild blueberry cream between pancakes. Finish with some fresh fruit and powdered sugar.
