Coleslaw is a delicious side dish that goes well with so many options. While restaurant-style coleslaw can be heavy and greasy, this homemade version is the opposite: fresh, nutritious, and delicious.
What makes this coleslaw recipe special, is that it’s made with powdered wild Arctic blueberries! Wild blueberries are packed with antioxidants, fibers and vitamin A, C, D, and K; a true superfood. In addition, the wild blueberry powder gives this coleslaw a beautiful light pink color that will impress your guests.
Vegan option: Substitute Greek yogurt for plant-based yogurt
Arctic Blueberry Coleslaw
Preparation time: 5 minutes
Total time: 65 minutes
1 cup (240 mL) of shredded cabbage
1 carrot, peeled and shredded
1/4 cup (60 mL) Greek yogurt
1 tablespoon white vinegar
1-2 teaspoons Arctic Flavors wild blueberry powder
a pinch of salt and pepper
- In a large bowl, combine shredded cabbage and carrot
- In a smaller bowl, combine yogurt, vinegar, wild blueberry powder, salt, and pepper.
- Mix all ingredients together in the large bowl.
- Serve as a snack, or as a side dish.
